Day 215 of 366: thankful for Miss Alicia’s cooking

If it’s not one thing, it’s another. With the headaches gone, Ms. Anemia decides to make herself present once again and I’m left breathless and fatigue, but by God’s grace, I’m alive, so I’m thankful.

Another thing I’m thankful for is Miss Alicia’s cooking. She’s the “Wings & Fries” lady in our area, and we support her any which way we can. Yesterday, she had a Customer Appreciation Day for customers in which she’ll cook, and we’ll just pick up our food and a juice.

I am thankful for Miss Alicia, her cooking, and her thoughtfulness, for people rarely give back to customers. May God continue to bless her.

Cooking has been fun lately, but I’ve come to realize that I’d rather be baking. However, I’ve been learning to create new dishes and recently, I made a rice pie. It was just a plain one with cheese and sweet peppers, but I was happy at how it came out. I looked up some variations of rice pie around the world, and I look forward to attempting the Italian and Belgian versions soon.

I am thankful for attempting a new dish although it was quite simple.

Today, was quite restful compared to the last few days, and I was quite thankful for this. I woke up not too long ago and did Bible study with my sister and although I’m still a little sleepy, I’m going to engage my sisters in an active Bible discussion. Have a blessed evening.

I’ve been experiencing with spices when it comes to giving chicken that extra zing. At the moment, I love rosemary, cardamon, caraway, cinnamon, thyme, and ginger. 

I’m certainly thankful for the variety of spices and herbs! When combined right, it can cause a singing explosion for your palate.

Alan and Alex have been testing some food hacks from TikTok and I’m here for it. I’m yet to try any of them, but I have some faves that I’m itching to try. I’m out of ingredients, so I’ll have to replenish before I start cooking.

I love potatoes and I love exploring new ways to cook them so when I came across latkes (or potato pancakes), I was elated! We finally got around to making it and it was so good that I look forward to having them again real soon.
