Here in the Caribbean, saltfish is a big deal for us. We make buljol with it and eat it with everything from crackers to fried bakes. We also like it stewed so it can be accompanied by rice. I love that I can go to this salted delicacy when I don’t feel for chicken.

I am thankful for saltfish.
